Serves 3-4 adults. Flour and dairy free if you need it to be. This fed our family of 5, with a couple of seconds. Warming yet light, this simple dish is always a winner with most of the family (there's always one though!).

Low Carb Keto Pancakes

Serves 3 (they are filling!). I have never liked to commit to any sort of 'diet', particularly restrictive ones, however in the last year I've tried to cut down on processed foods. The easiest win for me was removing any kind of bread. Seeing as I mostly fast in the morning, my daily avocado sourdough addiction was removed and I felt way more energised. I often have these pancakes at the weekend with the kids, who will eat anything that vaguely looks like a pancake! The added bonus of these it that you get a hefty portion of protein - 38g of the recommended 45g daily intake.
