Nectarine & Mozzarella Salad

Serves 1-2 depending on whether you’re eating it as a main meal or with something as a side.

  • 2 x Nectarines or Peaches
  • A chunk of mozzarella
  • ½ a handful(ish) of mint
  • A handful of rocket
  • Extra Virgin Olive Oil
  • Pinch of salt
  • Honey


Arrange your rocket on a plate. Chop the fruit into quarters or slices. Pull the mozzarella into bitesize chunks. Pop everything on top of the rocket and pour over a good glug of oil. Add a drizzle of honey and a sprinkle of salt. Garnish with the mint.
