Winter Waldorf Slaw

Adjust serving to suit you. This will serve 4.

  • 1 Apple Sliced Thinly
  • 1/4 Small Red Cabbage
  • 1/4 White Cabbage
  • Any Greens like Cavelo Nero or Crunchy Salad (gem/ butterhead)
  • Big Glug Extra Virgin Olive Oil
  • 4 Tbsps Mayo (Hunter Gatherer is a good option)
  • Handful of Walnuts (bake for a deeper flavour)
  • 3 Tbsps or more of roast Pumkpin seeds (see recipe)
  • Optional chunk of Rocquefort Cheese broken up


Slice the cabbage and apple thinly and mix together in a big bowl.

Make a dressing with the olive oil, salt and mayo. Add in lemon juice or Djion if you fancy.

Coat the slaw with the dressing and sprinkle in  the cheese and all the nuts and seeds. Go heavy on these, the crunch plus the creamy cheese is delish.
