Tofu Remoulade
When I realised I could grate Tofu it was a good day. I love Celeriac remoulade with fish and salad, or even on a baked potato, so this is my version with a much bigger protein punch.
- Firm tofu – as much as you want. Adjust below to suit.
- 3- 6 tbsp Mayo
- 1 – 3 tsp Dijon Mustard
- ½ lemon, juice only
- Salt and freshly ground black pepper
Optional Extras
Sprinkle of walnuts or pecans
Pinch of sugar
Method
Grate tofu, mix in the rest. You could try adding chopped gherkins and capers for a vinegary hit.
