Low Carb Keto Pancakes

Serves 3 (they are filling!). I have never liked to commit to any sort of 'diet', particularly restrictive ones, however in the last year I've tried to cut down on processed foods. The easiest win for me was removing any kind of bread. Seeing as I mostly fast in the morning, my daily avocado sourdough addiction was removed and I felt way more energised. I often have these pancakes at the weekend with the kids, who will eat anything that vaguely looks like a pancake! The added bonus of these it that you get a hefty portion of protein - 38g of the recommended 45g daily intake.

  • 4 eggs
  • 80ml almond, or dairy milk
  • Optional 1 tsp stevia (sugar substitute derived from plants) 
  • 1 tsp baking powder
  • Pinch of ground cinnamon
  • 175g almond flour
  • ½ tsp vanilla extract

Optional Extras

Greek Yoghurt or Alpro Almond yoghurt (no sugars).

Frozen Blueberries/ red berries

Nuts and seeds - pecans, walnuts, brazil and macadamias are the lowest carb if that's what you're into! I always add pumpkin seeds though.

Maple syrup

Method

Whisk the eggs and milk together. Add the vanilla then the dry ingredients - the flour, stevia, baking powder and cinnamon.

Heat a non stick pan, and add a couple of spoons of batter to the size you want. Cook for a couple of minutes, and flip. They might feel a bit of wobbly but they do hold.

Once cooked I like to stack them with greek yoghurt in-between, berries and nuts on tops and a little drizzle of maple syrup. Yum.
