Energy Bites
Healthy, protein packed bites for the whole family.
- 70g oats
- 60-70g almonds, cashews or whatever nuts you have.
- Optional desiccated coconut, some for rolling at the end, plus a few TBSPs for the content of the balls
- 10 Medjool dates de-stoned (if they are hard, soak in hot water before whizzing)
- 3-5 tbsps of melted coconut oil..
- 1 tbsp of peanut/ nut butter
- Optional 3 tbsps Cacao
Method
You'll need a food processor. I have actually managed this in a nutri-bullet but it's not an easy task!
Whizz your dry stuff, the nuts, oats and coconut and empty into a bowl.
Whizz about 10 dates with 3-5 tbsps of melted coconut oil.
Add a tbsp of peanut butter and the dry ingredients, plus 3 tbsps cacao if desired. Whizz.
Now the kids can join in. Roll into balls and through the in dried coconut if desired.
Freeze or demolish in a few days. Keep in the fridge.
