Nectarine, Asparagus, Mint + Mozzarella Salad

Serves 1-2 depending on whether you’re eating it as a main meal or with something as a side.

  • 2 x Nectarines or Peaches

  • 3-5 Asparagus, steamed and chopped

  • A ball of mozzarella, ripped into pieces

  • ½ a handful(ish) of mint, chopped

  • A handful of rocket

  • Extra Virgin Olive Oil

  • Pinch of salt

  • Honey

Optional Extras

Roasted pumpkin seeds or hazelnuts.

Half an Avocado chopped.

Method

Steam the asparagus for under a minute to keep them slightly crunchy, then chop into inch size pieces. Arrange your rocket on a plate. Chop the fruit into quarters or slices. Pull the mozzarella into bitesize chunks. Pop everything on top of the rocket and pour over a good glug of oil. Add a drizzle of honey and a sprinkle of sea salt, plus a good crack of black pepper.. Garnish with the mint.
