The Easiest Smoked Fish Chowder
Serves 3-4 adults. Flour and dairy free if you need it to be. This fed our family of 5, with a couple of seconds. Warming yet light, this simple dish is always a winner with most of the family (there's always one though!).
- Approx 1 Litre Boiled Water
- 3 Medium Potatoes
- 3 or 4 Carrots
- 400g Sweetcorn
- Approx 200ml Milk (depending on your taste)
- 1/2 Stock Cube or a Tbsp Bouillon
- 4 Fillets of Smoked Haddock or Cod or both
- Pinch of salt
- Pepper to taste (but go hard)
Optional Extras
To make this a richer chowder, add in a glug of cream.
Spinach, cavalo nero, parsley, anything!
Method
Put the boiled water in a pain bring to a simmer.
Chop your (peeled) potatoes and carrots into satisfying little squares and add to the water until nearly cooked but keeping their shape.
Meanwhile add around 350g of the sweetcorn to the mikl and blend. This creamy sweetness is the base of the dish, so simple and tasty.
Add the creamy sweetcorn to the water with the potatoes and carrots, plus the remaining whole corn. If you feel it's too thick, add more milk or cream. Too loose? Add in a tsp of corn flour or plain flour. You'll know what works best next time.
Warm through and serve with crusty bread.
